The APEI Technical Seminar has just come to a close in Brescia: three intense days of training and exchange entirely dedicated to the Excellence of Italian Pastry.

During the event we presented Sofia , our reinterpretation of the Tuscan polacca: a cornetto with a straight, shorter and deliciously flaky shape designed to best accommodate the filling. A creation that combines respect for artisanal vision and innovation, and represents our ongoing commitment to the art of confectionery.
Sofia won over the APEI Masters, who praised the product’s outstanding quality and attention to detail: recognition that motivates us to continue with the same passion and dedication that have guided us for over 45 years.
