Prepared with the characteristic mix of flours for Pinsa—soy, rice, and wheat—and thanks to a slow 72-hour maturation and a very high-hydration dough, it offers a unique texture: crispy when bitten, and soft with an airy crumb structureon the inside. The ideal bread for any type of filling, from the simplest to the most gourmet.
